Ingredients:

 3  c  wheat flour, flour; whole wheat pastry 
 1/2  ts  salt 
 1 1/2  ts  baking soda baking soda 
 1/2  ts  cinnamon 
 1/4  ts  ginger 
 1/4  ts  allspice 
 3   eggs 
 1  c  buttermilk 
 1 2/3  c  apple juice apple juice; concentrate 
 1/3  c  oat bran 
 2  c  apples, apples; diced 
 1/2  c  walnuts, walnuts; chopped 
 2   apples, apples; sliced 

Preparation for Low Fat and Healthy Apple-walnut muffins Recipe:

Preheat oven to 350o. Let fruit juice concentrate thaw to a slushy
consistency. In a medium size bowl, sift together flour, salt, baking
soda, cinnamon, ginger, and allspice. Set aside
In a large bowl, whisk together eggs, buttermilk, and fruit juice
concentrate. Whisk the flour mixture into the liquid, adding bran.
Stir in diced apples and walnuts.
Line a muffin tin with baking cips; divide batter evenly among cups.
Top each muffin with an apple slice. Bake for 35 minutes.
