| 1 | c | buttermilk |
| 1 2/3 | c | apple juice; concentrate |
| 1/3 | c | oat bran |
| 2 | c | apples; diced |
| 1/2 | c | walnuts; chopped |
| 2 | apples; sliced |
Preparation:
Preheat oven to 350o. Let fruit juice concentrate thaw to a slushyconsistency. In a medium size bowl, sift together flour, salt, baking
soda, cinnamon, ginger, and allspice. Set aside
In a large bowl, whisk together eggs, buttermilk, and fruit juice
concentrate. Whisk the flour mixture into the liquid, adding bran.
Stir in diced apples and walnuts.
Line a muffin tin with baking cips; divide batter evenly among cups.
Top each muffin with an apple slice. Bake for 35 minutes.
