Ingredients:

   Vegetable cooking spray 
 1  c  Uncooked instant rice 
 1  c  Chopped onions onion 
 2/3  c  Diced red pepper pepper 
 1/2  ts  Prepared mustard 
 1/4  ts  pepper 
 14 1/2  oz  Whole tomatoes, (1 can) undrained and chopped 
 5 1/2  oz  Tomato juice, (1 can) 

Preparation for Low Fat and Healthy Spanish rice Recipe:

Coat a large nonstick skillet with cooking spray; place over medium-high
heat until hot. Add rice, onion, and bell pepper; saute 5 minutes. Add
remaining ingredients; simmer, uncovered, 5 minutes or until liquid is
absorbed. Yield: 3 servings (serving size: 1 cup).
