Ingredients:

 8  c  Whole wheat bread, cubed in 1" pieces 
 1  c  onions onions, small diced 
 1  c  celery, celery, small diced 
 1  tb  garlic, Raw garlic, minced 
 1/2  c  Wheat germ 
 2  c  Defatted chicken stock 
 1/2  c  Roasted chestnuts, chopped 
 3  tb  Fresh sage, chopped 
 1  tb  Fresh thyme, chopped 
 1  tb  Fresh parsley, chopped 
 2  ts  Kosher salt 
 1  ts  black pepper, freshly ground 

Preparation for Low Fat and Healthy Chestnut stuffing Recipe:

Sweat the onions and celery in a sauce pan with 2 Tblsp. of chicken stock
over medium heat. Add the remaining ingredients and mix until fully
incorporated. Adjust seasoning if desired. Place in pan or in a mold and
bake at 350 degrees F., covered until heated. Approximately 20 minutes.
