 2  ts  olive oil 
 1  c  Chopped onion 
 1/2  c  Chopped green pepper 
 2  c  Cooked long grain rice 
 1/2  ts  Ground cumin 
 1/8  ts  Ground red pepper 
 1/8  ts  Dried coriander 
 1   15-oz can black beans 
 3/4  c  Chopped tomatoes 

Preparation for Low Fat and Healthy Black beans and rice Recipe:

Heat oil in skillet on medium-high heat, add onions, pepper and saute until
tender. Stir in rice and next 3 ingredients. Saute 3 minutes. Add beans and
tomatoes, cook 3 more minutes.
