Ingredients:

 2 1/2  qt  water 
 3  lb  chicken, broilers or fryers, breast chicken; cut up and skinned (up to 4) 
 5   carrots, carrots 
 4   celery, celery; stalks 
 2  sm  onions onions 
 1   bay leaf 
 4   juniper berries 
 1/4  ts  pepper corns; whole 
 2  ts  basil 
 1  ts  salt 
   ---DUMPLINGS--- 
 1 1/2  c  wheat flour, flour 
 3  ts  baking powder 
 1  ts  salt 
 1/8  ts  white pepper 
 1/2  c  parsley; chopped 
 1  tb  chives; minced 
 3  tb  margarine, regular margarine 
 2/3  c  milk, nonfat milk; skimmed 

Preparation for Low Fat and Healthy Chicken and dumplings Recipe:

1. In a large Dutch oven, combine water, chicken, 2 quartered carrots, 1
stalk celery quartered, 1 onion peeled and quartered.
2. Add seasonings, bring to boil.
3. Reduce heat and simmer 45 minutes.
4. Remove vegetables and puree in food processor.
5. Add this to Dutch oven along with remaining vegetables, sliced thinly.
Bring to boil.
6. Combine ingredients for dumplings.
7. Drop tablespoons of batter into boiling broth.
8. Reduce heat to simmer.
9. Cover for 20 minutes and then remove bay leaf.
Preparation Time: 10 mins
Cooking Time: 70 mins
